Sunday roast left overs, can be turned into bubble and squeak, simply mix together left over potatoes and veg and fry in a little oil until hot and brown around the edges and serve on its own with warmed up left over gravy, and any left over meat.
Or turn left over meat into a curry, fry an onion and chopped clove of garlic, add curry paste, which ever goes with meat. i.e. balti- lamb or korma - chicken or madras - beef, then add chopped tomatoes and chopped up meat, you could add coconut milk to korma, and serve with basmati rice or naan bread.

Hello, was listening to your show today and your love food hate waste campaign got me thinking about what we do with our leftovers from a Sunday (when we rarely have any!), Monday veggie burgers is always an option and here is the recipe ,,,,
Put mashed potatos, carrots, swede, peas and any other leftover veg you may have, plus one small raw onion, finely chopped.
Mix in a bowl with a raw egg then shape individual burgers with your hands, pop a small amount of grated cheese on each one and put on a non stick baking tray in the oven for 15 mins on gas mark 7.
As you can see this recipe is low fat, healthy and ideal with a nice green spring salad!
All slimming world friends come for lunch on a Monday with crispy wholemeal ciabattas and a lovely cup of tea!! Yom Yom!!!

My tip for healthy eating and not wasting food. I buy vegetables as fresh as possible mostly greens, it takes me about 20 mins to prepare enough vegetables for several days. I keep these in the salad boxes in the fridge lined with kitchen paper. I then have a ready supply of assorted vegetables, tempting to be generous with portions. Any that are left over then make a good vegetable broth or the basis for other soups. The other advantage is that the peelings and parings are disposed of all in one go to compost or green bin.
